Roman-style white pizza – the real thing!
Best enjoyed with Lancia Flea Bianca beer
? INGREDIENTS for White Pizza
- 1 kg of Italian Type 0 flour
- Cold water 750 ml
- 1 g compressed brewer's yeast
- Extra virgin olive oil, 20 g
- Whole-grain salt or green salt, to taste
- Honey or malt syrup 10 g

? INGREDIENTS for the filling
- Mortadella
- Veal intestine
- Peeled tomatoes
- Spring onion
- Chili pepper
- Extra virgin olive oil
- Garlic
- Pecorino cheese
- Rooms
- White Wine
Procedure
Take a bowl and add the all-purpose flour and the water (cold from the fridge!) little by little, then start kneading the dough.
Take one gram of compressed brewer's yeast and add it to the remaining water, then mix the dough. Gradually add the oil to the dough to soften it, along with the remaining water.
The secret ingredient is honey, which will help the dough rise more evenly and make it more elastic. (8–10 grams). Lightly oil a bowl, place the dough inside, and cover it with a damp cloth. Let it rest to rise in a temperature-controlled environment or inside an oven with the light on.
Pour a little oil into a baking pan, and once the dough has risen, roll out the white pizza. Be generous with the oil 😉
