Chicken burger sandwich

Ingredients for 2 people:
- Pancetta – a few slices
- Caciotta
- Chicken thighs
- Chicken Thigh Burgers
- Garlic
- Braised pumpkin (pumpkin, red onion, butter, white wine vinegar, chili pepper)
- Pitted Taggiasca olives
- Zucchini flowers
- Bun
- Crispy loaf of bread
- Flea Extra Virgin Olive Oil
Procedure
Start with the spring onions: clean them and thinly slice both the white and green parts.
Take a skillet and place it on the stove with a knob of butter.
Before it starts to brown, add the spring onion, a pinch of salt, and stir well. Immediately add the diced pumpkin, cover with a lid (without adding water, but using the moisture released by the spring onion), and finally, add a clove of garlic.
After a few minutes, add a teaspoon of sugar and white wine vinegar to the vegetables.
After 10 minutes of cooking, add the chili pepper, and finally the Taggiasca olives.

Now let’s talk about the burgers, which you can make in two different ways.
For the first, more classic version, you can use patties made not from chicken breast, but from chicken thigh.
Brush them with a little olive oil and place them on the grill.
For the second method, you can use chicken thighs, which you can buy boneless from your trusted butcher.
Add a pinch of salt and a sprinkle of pepper, then your choice of herbs (thyme, rosemary, sage), a clove of garlic, and a drizzle of oil. Massage the meat to infuse it with all these flavors.
Let them marinate for at least one or two hours, but if you season them the night before, the result is even better.
Now move on to grilling. Start with the chicken thighs, which take longer to cook than the burgers, placing them skin-side down with the herbs and garlic on top. Once the skin is nice and crispy, flip the meat over to the other side.
When you put the burgers on the grill, wait until they develop a light crust before flipping them over.
Warm the whole loaf of bread, and when it's nice and warm, cut it open and scoop out some of the crumb.
Slice the caciotta cheese thinly and place it on top of the meat during the last 2–3 minutes of cooking, along with the zucchini flowers.
Spread some butter inside the bun.
Now you can fill your sandwiches with vegetables, meat, thinly sliced pancetta, caciotta cheese, and zucchini flowers.
