Chicken skewers

Best enjoyed with Big Bang Beer – Alba

Prep time: 30 minutes
Ingredients for 2 people:

For the marinade:

  • Untreated lemons – 2
  • Red onion
  • Big Bang Beer Alba
  • Pink peppercorns in brine
  • Sweet paprika
  • Rosemary
  • Rooms

For the side dish:

  • Mantua pumpkin
  • Fucino Potatoes
  • Curly savoy cabbage
  • Red onion
  • Fresh Scamorza cheese from Apulia
  • Sage

Procedure

First, debone the chicken, making sure to clean it thoroughly without wasting any meat. Leave the skin on, as it will add extra flavor to the dish. Now cut the chicken into bite-sized pieces and place them in a bowl. Add salt, pink peppercorns, sweet paprika, the juice of one lemon, and the lemon zest finely grated with a vegetable peeler, onion sliced into rounds, oil, rosemary, and Alba beer (Blonde Ale).

Mix well and let marinate for at least 1 hour or overnight; the longer you let it marinate, the better the result. If you decide to cook the skewers on an electric grill, the chef recommends marinating them overnight.

Now it’s time to prepare the vegetable side dish. Take a red onion and slice it thinly, then place it in a pan (ideally a wok) with sage and plenty of oil, and turn on the heat.

Then add the following in this order: a potato cut into very small pieces and let it cook until tender, followed shortly after by the savoy cabbage and a little salt.

Take the pumpkin, remove the seeds, and cut it first into slices and then into cubes, then add it to the wok. Add a little water and black pepper, and let it cook until tender (this will take at least 20 minutes). When all the vegetables are cooked, add the fresh scamorza cheese, cut into cubes.

In the meantime, prepare the skewers. Remember to soak them in water before using them, so they don’t burn while the meat is cooking. Thread the meat pieces onto the skewers, alternating them with pieces of onion and lemon zest.

When they're ready, cook the skewers on a wood-fired grill or, alternatively, on an electric grill. Let them cook, checking on them occasionally and turning them to ensure even cooking.

Arrange the skewers and vegetable side dish on the plate, and you're all set!
